Chateau Cap Saint-Martin is a red wine made from Merlot planted on clay-calcareous soils with a rocky subsoil in the Blaye area, by the Ardoin family.
The Ardoins cultivate their vines, planted 25 years ago with planting frames of around 5,000 feet per hectare. Yields are low, around 50hl/ha, and the harvest is selected using a state-of-the-art selection table. Total destemming, spontaneous fermentation and maceration for between three and six weeks. An aging of between 6 and 9 months in used Bordeaux barrels and a final assembly in steel and cement vats. Lightly filtered with vegetable protein.
A deliciously round wine, easy to drink, balanced and with a taste of Bordeaux. A claret luncheon.
