The basic Sancerre of the Domaine is a Sauvignon Blanc with its herbaceous, minerality and citrus accompanying the white stone fruit. Since the 2017 vintage, it has also been certified biodynamic. François Crochet played among the vineyards as a child and learned from his father and grandfather, and then continued his training at the Beaune Viticultural Lyceum, training that he put into practice in various domaines and wineries in France and New Zealand. In 1998 he was finally able to see his passion achieved: to become the third generation of winegrowers in the family, with the vineyards that he runs with his wife. The Domaine has plots with the most typical terroirs of Sancerre. Estates with dominant limestone, other clayey-calcareous and even a recently acquired farm with siliceous soil (silex). In all, seven hectares in the villages of Bué, Sancerre, Crézanzy and Thauvenay planted with Sauvignon Blanc, which nowhere shines as mineral as in Sancerrre, and another three and a half hectares of Pinot Noir. Their production methods are totally respectful of the health of the vineyard, they practice self-regulation of the vineyard, they make selections in the vineyard and in the winery and clarification and filtration are limited to the maximum.
