Description
Coming from a estate near Thauvenay, with a subsoil rich in silex, low yields (around 35hl / ha), manual harvesting, cold débourbage, unfiltered and with a very light clarification. Francois Crochet played among the vineyards as a child and learned from his father and grandfather, and then continued his education at the Liceo Vitícola de Beaune, formation he put into practice in various domaines and wineries in France and New Zealand. In 1998 he could finally see his passion achieved: to become the third generation of family winemakers, with the vines he runs with his wife. The Domaine has plots with the most typical terroirs of Sancerre. Estates with dominant limestone, other clayey-calcareous and even a farm recently acquired me with siliceous soil (silex). In total, seven hectares in the villages of Bué, Sancerre, Crézanzy and Thauvenay planted with Sauvignon Blanc, which nowhere shines as mineral as in Sancerrre, and another three and a half hectares of Pinot Noir. Their methods of winemaking are totally respectful of the health of the vineyard, they practice the self-regulation of the vineyard, they make selections in the vineyard and in the cellar and the clarifications and filtration are limited to the maximum.
