In the case of UBE El Reventón, Ramiro opted for palomino -the true queen of Marco Jerezano- which grows in the El Reventón vineyard, located in the estate of the same name (in Sanlúcar de Barrameda), where there is an abundance of tosca albariza closed. This type of soil is the most common in the framework, being a marl with a solid structure and with a small amount of diatoms (microscopic unicellular algae). When dry, this type of limestone soil is usually very hard, but with water and humidity it becomes much softer, giving wines with body and volume.
The manual harvest and spontaneous fermentation with native yeasts are two fundamental operations at Cota 45 and are essential during the vinification of UBE El Reventón. It should not be forgotten either that all this process will be carried out in old casks (between 70 and 150 years old), where UBE El Reventón will be vinified and aged. A slight filtration and the addition of a minimum dose of sulfur will be more than enough to bottle UBE El Reventón. We assure you that after this white you will be anxious to know the next installment of this series of wines.
