Description
Navazos Ovni PX is a white wine made with the Pedro Ximénez variety in Montilla, Córdoba, Spain. Ovni is a one hundred percent Coalla, one hundred percent Equipo Navazos project that was born with the 2011 vintage and has been consolidated in subsequent vintages, always seeking that improvement that leads us, today, to the recently released 2022 vintage. The last twist is that the harvest has been brought forward a little to offer greater freshness within that alcohol content in which Pedro Ximénez offers the perfect transmission of the terroir in Montilla. Because, let's not forget, in Montilla white wines have traditionally been harvested at 10 or 10.5% potential degrees of alcohol so that, mixed with vidueño, Pedro Ximénez has an almost green wine profile. The alternative is to harvest it at 15% where they are the base of the enormous Finos de Montilla that Equipo Navazos has already bottled on occasion.

Ovni from the beginning has been harvested between 11.5 and 12.5, this year as we said looking for an extra point of freshness, acidity, and with a very short aging in stainless steel and vessel without letting the veil of flower form. A wine that has us excited because it is a one hundred percent Equipo Navazos wine and a one hundred percent Coalla wine.
