Guerila Zelen is a white wine made by Zmagoslav Petric in the Vipavska Dolina Valley, in Slovenia, following biodynamic precepts.
The Zelen variety is a one hundred percent Slovenian variety that takes its name -Zelen- due to the emerald green tone of its must. Zelen is green in Slovenian. It is a small grain variety that gives rise to wines with very nice acidity and herbal touches, and Zmagoslav Petric is able to grow it biodynamically in the Pri Pila and Preske vineyards. Macerate briefly, press gently and let the must settle. Native yeasts and spontaneous fermentation. The wine spends 6 months in steel and concrete, bottled unfiltered and with minimal sulfur. It is a wine of great finesse, with Mediterranean floral notes, laurel, rosemary and thyme along with notes of yellow fruit. It also transmits well the minerality of the vineyard and is very easy to drink and very versatile.
Guerila is the personal project of Zmagoslav Petric, the son of farmers who at the age of fifty decides to return to farming because, as he says, you can separate a man from his land, but you can never take the land from his heart. . So, in 2005, he searched for the most suitable farms to grow the native varieties in the Vipava Valley, and turned to biodynamics to produce some of the most energetic wines in Slovenia. Small productions, wines with great personality but at the same time very easy to drink and that, in addition, are very digestive."
