The Enemigo Chardonnay is a varietal of the Chardonnay grape, made with vineyards located in Gualtallary, harvested manually, with carefully selected grapes. Winemaking is done in 35% new French oak barrels, with selected wild yeasts. After fermentation, the wine is left covered in a veil for 10 months in old barrels, protecting it from oxidation and forging a great character to the wine.
