In Graves there are white wines of great tradition, normally made with these two varieties that are also typical of the Sauternes. They give rise to fresh wines but with a certain substance typical of austere gravel soils. It's called """" Graves """" for a reason. This wine is traditionally vinified, at a regulated temperature, and is aged on its fine lees for eight months, in steel, to preserve the varietal aromas of the Sauvignon Blanc. Try it with salads or a scorpion cake.
