Equipo Navazos La Bota 107 de Florpower MMXX

La Bota 107 de Florpower MMXX's is a still white wine produced by Equipo Navazos in Sanlúcar de Barrameda, in Andalusia. Coming from 100% palomino fine grapes from Sanlucan vineyards with vines between 55 and 85 years old located in the Pago Miraflores La Baja, again in this 2020 vintage the wine fermented in the old style, in the same casks in which it has later been raised under a veil. After fermentation, it was raised under flower yeasts for eight months. In May 2021 the wine was removed from the casks and passed into a stainless steel tank where, always under the influence, already much more subtle, of flower yeasts, it remained until it was bottled in July of the same year.

It is a wine that, within the Florpower saga, continues the style started with releases 67 (More here), 77, 84 and 97. That is, that of an aging under a veil somewhat shorter than that of the first Florpower . And it is that, as they themselves say, it is about finding the point of balance and freshness for a perfect expression of the vineyard through the biological aging process, even shorter than in the first Florpower. Only a couple of months of rest and tenuous aging under grain in steel tanks after the common initial period of intense biological aging in the traditional 600-liter Jerez casks.
