Le Petit Chemarin is the name of a limestone soil vineyard with excellent south-southeast exposure in the town of Bué in Sancerre. It is recognized as one of the best vineyards in this commune. The vineyard has been organically cultivated for a decade and has been certified since 2014. Biodynamic certification began in 2018 and the 2020 vintage will have already been achieved. A low yield of around 40 hl per hectare is sought. For this, grass is left between the vines, shoots are limited in spring and depending on the vintage, a harvest can be carried out in summer. Of course, it is harvested by hand, selecting in the vineyard. Very soft pressing, indigenous yeast and aging on lees for between 12 and 18 months depending on the vintage. Slightly filtered and clarified.
