A wine that connects directly with our very great Sherry wines since it comes from one of the best soils in the world, the marnas of the Jura and a perfect climate for the Savagnin variety. Biodynamic work is what allows Domaine Pignier to make a Vin Jaune that is an authentic aging wine, they say more than a century. But it all begins in the vineyard, and there the yields are limited to 25hl / ha, the vinification with indigenous yeasts in Burgundian barrels for six years, and then only one out of every three barrels will be chosen to be bottled as Vin Jaune in that characteristic bottle. of 62cl.
