From one of the most prestigious vineyards of Mosela, a Selbach Oster Kabinett with a certain vanilla touch, good feature of the plot. The origin of Selbach-Oster dates back to 1661 by the union of the two families that give the Weingut a name. The family has had interests in cooperage, viticulture and river transport, in what could be a perfect example of vertical integration in the German wine industry. Today they have 16 hectares of vineyards among which are some of the most prestigious vineyards of Zeltingen (Zeltingen Schlossberg, Zeltingen Sonnenuhr, Graacher Domprobst or Wehlener Sonnenuhr) that they elaborate following the precepts of the pradikatt (Kabinett, Spatlese, Auslese). Vineyards that are composed of blue slates of the Devonian period, with slopes between 30 and 60 percent inclination. Some of the best terroirs in the world. The tradition and solidity of the winery for more than three centuries have instilled in the Selbach a predilection for quality and hard work as a precedent for that quality. That hard work includes pruning in green in August, the usual manual harvest in the Moselle and winemaking in the traditional thousand liter fudres in the area. If we had to highlight something of Selbach-Oster's wines, it would surely be the cleaning and transmission of the terroir, that they are capable of performing. Not surprisingly, it is one of the largest Weingut in Germany.

From the highest vineyards in Naoussa, this single varietal from Xinomavro is harvested at almost 600 meters on granite and shale soils. The vines were planted more than two decades ago, it turns out an iron fist in a silk glove. Very fine, delicious red fruit, in the mouth the wine is fresh, light as a dancer and leaves us memories of ripe fruit. A wine...
Fundamentally Mencía (90%) with 10% of other grapes such as Brancellao, Mouratón and Sousón from several vineyards at altitude, with granitic and slate soils. Small production per strain (less than 1.5kg), aging in large barrels for 20 months followed by a similar period in the bottle for refining. Clarified with egg white and unfiltered.
A vineyard that once belonged to someone called Simonette and surrounded by walls is the origin of the name of this wine: Clos de la Simonette. Our favorite of Isabelle and Matthieu wines. We are facing a great wine from Languedoc, France, and the World.
Aceite y Vinagre
