One of our favorite Kabinett, by Selbach Oster, with notes of citrus and minerals, characteristic of the parcel. The origin of Selbach-Oster dates back to 1661 by the union of the two families that give the Weingut a name. The family has had interests in cooperage, viticulture and river transport, in what could be a perfect example of vertical integration in the German wine industry. Today they have 16 hectares of vineyards among which are some of the most prestigious vineyards of Zeltingen (Zeltingen Schlossberg, Zeltingen Sonnenuhr, Graacher Domprobst or Wehlener Sonnenuhr) that they elaborate following the precepts of the pradikatt (Kabinett, Spatlese, Auslese). Vineyards that are composed of blue slates of the Devonian period, with slopes between 30 and 60 percent inclination. Some of the best terroirs in the world. The tradition and solidity of the winery for more than three centuries have instilled in the Selbach a predilection for quality and hard work as a precedent for that quality. That hard work includes pruning in green in August, the usual manual harvest in the Moselle and winemaking in the traditional thousand liter fudres in the area. If we had to highlight something of Selbach-Oster's wines, it would surely be the cleaning and transmission of the terroir, that they are capable of performing. Not surprisingly, it is one of the largest Weingut in Germany.

Javernières is a climat within the Côte du Py, located in the lower part, where the ferrous oxide component is combined with a higher proportion of clays than in the upper part. South-east exposure, gives rise to wines of great typicality, with great potential for storage, and is simply the wine that fell in love and brought the Domaine Desvignes to our...

Perhaps, zamburiña is the least known canned, and yet they fascinate us in its canned version. From selected pieces, Dardo makes a stew with scallop sauce and canned them so that they reach our table with all their power.
Palomar is the most emblematic wine of Zárate. 100% Albariño planted ungrafted in a tiny estate (less than half a hectare) and fermented in oak fudre in contact with the lees, in a process destined to give structure to the wine that the winery considers of guard, despite the fact that excite us in such a way that ... bottles don't usually last long.

Between 8 and 12 oysters can be from the US and Canada, succulent pieces with a delicate smokiness that provides the necessary touch for the flavor to be enhanced. A versatile can that we can consume like this, from the same can, or by mounting a luxury canapé on a toast of bread, a thin layer of butter and topped with a fresh chive leaf.
