Description
OVNI 2018 Palomino Fino comes from vineyards located in an inland area of ??Jerez de la Frontera, although we do not rule out using other vineyards and estates in future vintages. For fermentation, the grape juice in the tank was added to the flor of Fino wine also from Jerez. It has subsequently remained for six months in the tank, with the protection of a subtle veil of flor formed on its surface. However, unlike other white wines from Equipo Navazos such as Navazos-Niepoort or Florpower, it cannot be considered a wine marked by biological aging. It simply happens that in the wineries the flor is everywhere and any wine below 17/17.5% alc. will necessarily be exposed to a greater or lesser degree of contact with it.

OVNI 2018 has been conceived for light and casual consumption, foreseeably within a couple of years after the harvest, but we do not rule out a balanced evolution in the bottle.

The idea that drives Coalla Gourmet and Equipo Navazos to launch this initiative is to add a new perspective on the true essence of Andalusian wines. Without giving up authenticity, the magical limestone lands of Lower Andalusia not only provide the raw material for the wonderful finos, manzanillas, amontillados, palos cortados and olorosos, wines of great respect and world class, but also fun and fresh wines such as OVNI 2018 Palomino Fino.
