Description
Una vez más desde la Bodega Luis Pérez y de la mano de su fundador Luis y su hijo Willy, incansable en la búsqueda del auténtico origen de los vinos del Marco, nos traen este vino elaborado a partir de un viñedo ubicado en la histórica finca La Panesa, sobre suelos de albarizas del tipo Barajuelas y Toscas cerradas. Ha sido vendimiado a mano y de noche, en pequeñas cajas de no más de 14 kilos para prevenir dañar los racimos. Los racimos fueron cuidadosamente seleccionados de acuerdo a su madurez, para después ir depositándolos el suelo para empezar el asoleo que tuvo lugar durante 12 días, volteándose los racimos cada 3 días. Tras esto pasan a una pequeña prensa vertical donde se obtiene no más de un 25% de rendimiento. Este mosto de la prensa pasó directamente a una única bota sin desfangar para fermentar libremente durante tres meses sin ningún control de temperatura. La primavera siguiente volvió a fermentar, incrementando así un poco su grado alcohólico. Esta bota ha sido controlada durante estos 4 años hasta su embotellado el pasado verano .
