Description
The Pedro Ximénez grape variety reaches its exact ripeness at around 11.5-12.5% ??alc., where the balance between primary aromas, acidity, alcohol and mineral structure is optimal. Harvested at this point, the Pedro Ximénez grown in the best white soil vineyards of Moriles Altos and the Sierra de Montilla offers enormous purity. It is precisely from these historic vineyards that the grapes used to make OVNI 2017 Pedro Ximénez come from. The vineyards that produce the ideal fruit for this unique wine have some vines (no more than 10%) of grapevines mixed in.

To allow the grape and the soil to express themselves in all their intensity, not only the free-run must has been used for this wine, but also part of the second-press must, locally called “color”. From there, natural fermentation with local yeasts, and a brief settling for a few months, part in stainless steel tanks, part in cement vats with the protection of a light veil of yeast, enhance the limestone terroir and give this wine all the character of its place of origin.

OVNI 2017 is designed for light and relaxed consumption, foreseeably within a couple of years after the harvest, but we do not rule out a balanced evolution in the bottle.
