A Pita Cega 2017

Pilar Higuero is the leader of Lagar de Sabariz, a pazo in the province of Orense with vineyards at an altitude of 500 meters and 300 meters from the Miño River, cultivated organically and biodynamically. Vines have been cultivated at Finca Sabariz for over 500 years. The vineyard covers a total area of ??30 hectares, distributed between vineyards (4 hectares), meadows, olive groves, orchards, and oak and pine forests. A Pita Cega is a wine made primarily from Albariño and Treixadura grapes, as well as a few minority varieties from the area. It is not protected under any designation of origin. Crushed without destemming, the wine is pressed with a pneumatic press, without adding sulfur. Once settled, the must fermented with wild yeasts. Aged in steel tanks on its fine lees for 36 months. Bottled with minimal addition of SO. 12 months of aging in the bottle.
