Tomás Postigo, a former winemaker at Pago de Carraovejas, presents a white wine made from Verdejo selected from the best vineyards in Serrada (Valladolid). Nocturnal harvest, with cold maceration of the skins in its must before fermenting and fermented in new mainly French barrels, with subsequent aging for 7 months in the same barrels, with frequent batoneos. Barely 13,000 bottles of a white wine that we think marks a very high level in the D.O. especially for the judicious use of a wood that is unnoticed.
