Whole pressing and subsequent fermentation in 1200 liter chestnut fudres, which is followed by an aging of eight months in wood and three in the bottle.

Whole pressing and subsequent fermentation in 1200 liter chestnut fudres, which is followed by an aging of eight months in wood and three in the bottle. The wine has not performed the malolactic to preserve acidity and retain all possible freshness.
