Description

Fresquito Vino de Pasto, from Bodegas Pérez Barquero (Montilla-Moriles DO), is a white wine crafted from 100% Pedro Ximénez using the traditional "Pasto" method. It begins by spraying “Fresquito de Tinaja” while retaining the fleur and lees (cabezuela), in barrels previously used for fino and located in humid areas of the cellar. The wine undergoes 12 months of biological aging under flor and lees, then is rounded off with bottle aging. It displays a pale yellow color with golden highlights. The nose is fresh, offering ripe fruit, baked bread, chalk, and almond. On the palate it is well-structured, with balanced acidity, pronounced salinity, and a long, slightly bitter finish.
Produced in limited quantities, it’s highly gastronomic and pairs beautifully with seafood, salted fish, cheeses, and rice dishes. Scored 93 by Peñín
