Description
In Pardas they are xarel.listas and aspriu is no exception. It is already the third xarel.lo wine from the winery. The confidence in this grape is total and when that happens it is inevitable to make a Vineyard Wine. La Lola is a 1.2 hectare vineyard. of xarel.lo with southern exposure located in the Serral del Titet, on the Can Comas estate with a unique micro-climate. The xarel.lo wants clay and lime and here it is available in different proportions and quantities. Aging for 7 months between cement, used oak and stainless steel. Jordi Aran (agronomist) and Ramón Parera (oenologist) are the alma mater of Celler Pardas, a model winery established in Finca Can Comas, in Alt Penedés. They personally work the lands and produce only what they have grown. They practice strictly dryland viticulture, working with spontaneous vegetal covers and letting the vintages express themselves as freely as possible. They carry out radically ecological conservation agriculture, and do not till the land to prevent erosion and favor life in the soil. They only make wines that they like to drink and that are a reflection of the place. All fermentations are spontaneous, the wines are not clarified nor are they barely filtered.
