Biodynamic work is what allows Domaine Pignier to make a Vin Jaune that is an authentic aging wine, they say more than a century. But it all begins in the vineyard, and there the yields are limited to 25hl / ha, the vinification with indigenous yeasts in Burgundian barrels for six years, and then only one out of every three barrels will be chosen to be bottled as Vin Jaune in that characteristic bottle. of 62cl.
