Pignier Chardonnay de la Reculée is a white wine made with Chardonnay from the Montaigú Valley by the Pignier family, in Jura (France).The village of Montaigu is flanked by two steep slopes (that means reculée: steep valley) in a typical way in the Jura. The valley penetrates the mountain range and the vineyards are sheltered by the mountain which, due to the Foehn effect, provides moisture to the soils of the secondary age, white marnes with mica and fossils with calcareous deposits typical of the Jura.The plants come from a mass selection of ""melon à queue rouge"" from the Domaine itself, and yields are limited to 35hl/ha as a Burgundy Grand Cru. Vinification in burgundy barrels without debourbage, or soutirage, or yeasts, or chaptalization, or any oenological additives. It ages in those same barrels to add fat and is bottled on prime day.In the glass it seems pale in its youth, there are white flowers and yellow fruit, the freshness is crystal clear. Enjoy it as an aperitif but also at the table at around 12 degrees.
