Description

As its name indicates, it is a delicate, subtle, sharp and very FRAGILE wine with a lot of Verdejo varietal character. Decanted must with low turbidity. It is lowered into 16-litre glass demijohns for fermentation.

The low fermentation temperature, due to the constant 13 degrees of the underground cellar, means that the primary aromas are not lost during fermentation.
After the slow fermentation, the wine is left to rest in contact with its own lees. This aging in glass gives the wine a natural protection without the need to use SO2.
100% Verdejo wine, 100% bush vines, 100% pre-phylloxera, 100% harmonious cultivation, 100% crystalline, that is, 100% natural without added sulphites.

A unique and unrepeatable wine!!!
