Description
A green landscape shaped by small hills nestled between Burgundy and Switzerland. Aromatized by the vapors of Comté, the great cheese of world fame. Cool climate, vineyards planted on slopes at different heights. Infinite varieties of grapes where Chardonnay, Savagnin, Poulsard, Trousseau, Gamay, etc. stand out. Fafan Ganevat, as his friends call him, is a true alchemist who drives you crazy with more than forty cuvées that he makes each year. A winemaker whose religion is biodynamics and natural wines. A tiny Domaine in the village of La Combe de Rotailer where he manages approximately eight hectares. Trained in Chassagne Montrachet with Jean Marc Morey, he took over the family property in 1998, where his sister Anne would later join him. He is a perfectionist and what would be maddening for most, he makes it an everyday occurrence. He hardly uses sulphur and there is always a fear that the wines will spoil in transport, but he avoids this completely by ageing on lees for long periods of time that can even reach 11 years. His wines lack the traditional oxidation of the Jura and he prefers the Burgundian style of lightness and elegance. His wines are out of this world. Ganevat La Graviere Chardonnay 2020 This Cuvee comes from a vineyard planted on a terroir of grey and iridescent marls. The wine is kept in demi-muds and amphorae for three years without any intervention. It was bottled without fining, without filtering and without adding sulphur. Subtle wines, but with an impressive minerality. It is worth keeping track of.
