Description
Suavia manages 30 hectares of vineyards in the classic zone of Soave (Veneto) cultivated entirely organically. The soils are volcanic and of a good altitude. It is a very cool climate but with good hours of sunshine. Only two grape varieties are cultivated: Garganega and Trebbiano di Soave. Monte Carbonare is made 100% with Garganega from plots that cover 6 hectares of volcanic terrain and very dark soil, hence the name of the wine. Malolactic fermentation is not carried out and the wine is in contact with its lees for 15 months in stainless steel tanks to spend another 5 years refining in the bottle. Notes of sulfur due to its volcanic origin, citrus with great freshness and elegance
