Les Ursulines is a white wine made from Chardonnay by the Jean - Claude Boisset winery under the AOC Bourgogne. The harvest is manual and the whole bunches are gently pressed in the cellar for two and a half hours, to give way to a long fermentation with native yeasts. Aging for 7 months, without racking or stirring, in new French oak barrels with a very light toasting. The wine is balanced, mineral and very elegant, with ample aging potential.

Description
Les Ursulines is a white wine made from Chardonnay by the Jean - Claude Boisset winery under the AOC Bourgogne. The harvest is manual and the whole bunches are gently pressed in the cellar for two and a half hours, to give way to a long fermentation with native yeasts. Aging for 7 months, without racking or stirring, in new French oak barrels with a very light toasting. The wine is balanced, mineral and very elegant, with ample aging potential.

House founded in 1961 that is located in a former Ursuline convent, where the oenologist Gregory Patriat works with the utmost discretion in his technical intervention, with the aim of producing authentic wines, using native yeasts, the wines are concentrated, round and tremendously expressive of the terroirs from which they come. The winery defends the philosophy of "Viniculturalism" defined by the Boisset family, where the winemaker is as linked to the vineyards as to the winery, working hand in hand with the winegrowers to achieve the maximum expression of the vineyards. Burgundy through and through, albeit under a renovation filter. Each one of the "appellations" in his collection is the result of a rigorous selection and has a limited production. This is Burgundy, meticulous elaboration in the most traditional way.
