Le Pavillon is a white wine made by Nils and Ombretta Drost from the Chenin Blanc variety they grow in Anjou, Loire Valley, France.
The name of the wine comes from the vineyard of the same name, traditionally called this way because butterflies (papillons) usually take refuge in the gaps in its stone walls.
Nils and Ombretta make this wine with old vines, between 30 and 40 years old, in this northeast-facing vineyard that has soils of stoneware, micas and carboniferous argillite, as well as a hard volcanic bedrock called pierre carrée. It is made and aged in cement vats and the Drosts try to show the natural balance of this vineyard in the wine.
