Domaine des Ardoisières Schiste is a white wine crafted with Jaquere, Roussane, Malvoisie, and Mondeuse Blanche on the sunny terraces and stony soil of Coteau de Cevins, Savoie, France.The vines are arranged on well-exposed terraces facing South and Southeast, with slopes of up to 60%. The soil is predominantly slate, with the presence of mica schisteux, silt, and limited depth.The grape blend chosen is as follows: 40% Jaquère, 30% Roussane, 20% Malvoisie, and 10% Mondeuse Blanche. Each variety contributes to the uniqueness of the wine.Grapes are cultivated using the gobelet system on échalas, with a limited yield of 30 hl/ha, aiming for concentration and quality in the harvest.Regarding vinification, whole-cluster fermentation is chosen, utilizing indigenous yeasts to preserve the authenticity of the grape. The aging process occurs in barrels for 12 months, adding complexity to the final product.The result is a balanced, fresh, and structured wine that reflects the characteristics of the terroir in every sip.
