AT Roca
The "Agustis Torelló" Sibill y Roca, father and son, in their AT Roca winery, bring to light a new work, called Anima Mundi. It is the project of the recovery of the ancestral techniques and the maximum contribution of the area. Viticulture with biological patterns and lunar cycles. Minimal intervention and no added sulphites.
Gres is a Xarel.lo monovarietal from vines between 50 and 60 years old in glass from Alt Penedés. Its preparation is threefold. One that ferments in old 500-liter barrels, another with aging in clay amphoras and another fermenting with its own skins and aging in stainless steel.
All these elaborations then spend a 6-month aging in their container with spontaneous fermentations. Something unique, a hyper gastronomic wine.
