"Agostado" is the name that receives, as long as it is known, the in-depth work that is carried out on the albariza soils for the new plantations. Formerly this work was done by hand, where the mayetos, using the hoe and deepening to a height close to their own chest, dug breaking the different types of albariza. Hand-scorched, like the old classifications of boot-fermented sherries, owed their success to man's powers of observation and sensitivity.
