Description

Un "vino blanco" elaborado por Equipo Navazos con los mismos criterios de rigurosa calidad que seguían los mejores vinateros del Bajo Guadalquivir hace 200 años: uva palomino fino procedente de un histórico viñedo de albariza; fermentado en bota con las levaduras autóctonas que impregnan el viñedo y las propias vasijas; a continuación, sometido a ocho meses de crianza bajo velo de flor a graduación natural, gracias a otras levaduras asimismo autóctonas que toman el control de las botas inmediatamente después de que el último grado de azúcar presente en el mosto ha acabado de fermentar. Y, por supuesto, sin la adición de ni una sola gota de alcohol. En el Marco de Jerez, la añada 2012 fue corta de rendimiento pero (en buena parte probablemente por ello) sencillamente perfecta en términos de calidad, la mejor que recordamos en los últimos casi cuarenta años. Esto, junto con el conocimiento acumulativo que vamos adquiriendo acerca de este vino histórico pero revolucionario, ha permitido que de nuevo podamos decir que esta añada de Navazos-Niepoort sube otro pequeño escalón de calidad con respecto a las cuatro anteriores. Recomendamos que se disfrute frío, a unos 9ºC, con pescados y mariscos poco elaborados, así como arroces y pastas ligeros, y ensaladas de sabores delicados.
