Ovni Palomino Fino is a still wine made with the Palomino Fino variety from Sanlúcar and bottled by Equipo Navazos.
It comes from old vines located in a coastal payment, Miraflores la Baja in Sanlúcar de Barrameda. It fermented in stainless steel at a controlled temperature and then remained in a tank for a very short time, seeking to keep it away from the influence of the flower so that it expresses the minerality of its terroir with the greatest precision.
OVNI 2021 has been conceived for light and casual consumption, predictably within a couple of years after the harvest, but it is a very serious wine of extraordinary quality whose evolution in the bottle will predictably be splendid.
The idea behind Coalla Gourmet and Equipo Navazos in launching this initiative is to add a new perspective on the true essence of Andalusian wines that also allows them to produce fun and fresh wines, without giving up depth, such as OVNI 2021 Palomino Fino.
