Aged white wine made with the Albillo variety from old vineyards located in Quintana del Pidio. Alcoholic fermentation in cement and aging in French oak barrels for 6-8 months on lees.New project by Cillar de Silos. Dominio del Pidio is formed by the Aragón brothers who, faithful to their legacy, decided to recover the old 16th century winery district of Quintana del Pidio. Five cellars and underground presses that make up one of the oldest wine-making places in Spain. A wine that has spread legends and immortal experiences. The winery produces three wines from small plots of old vineyards between 40 and 100 years old, they are aged 18 meters underground, fermenting them in cement containers and aging them in French oak barrels.
