Colina Triste is a white wine made by Luis Martín, owner of Vinos Sinceros, with the Albillo, Viura, Malvasía and Chasselas varieties, among others, planted in his Lerma vineyards in the heart of the Ribera del Arlanza in Castilla y León. To make this wine, the entire Arlanza river is covered, from its highest and most rugged part in the town of Covarrubias to the lowest lands of Lerma where the valley is wider. This is done for two reasons, the first to be able to gather a greater quantity of kilos since there is hardly any white vine in the area and only by searching among the oldest hawthorns are vines of Albillo, Viura, Malvasia, Chasselas, Rojal, and some others. With this, greater complexity is achieved, due to the diversity of soils and landscapes that are found in just 20 km, this would be the second reason. The harvest takes place at the end of October in 15 kilo boxes, and it is not pressed until the next day. The boxes are left on the street to take advantage of the low night temperatures that exist at that time of year. After another night in the cold, a first racking is done and a clean must is obtained in the most natural way, in a couple of days a second racking is done, half goes to 300-liter barrels for second and third wine and to a tank of stainless steel, here spontaneous fermentation starts without any addition of anything, no yeast, nothing. Every day the barrels are shaken to move the fine lees precipitated at the bottom, thus more fatty acids are obtained, and forcefulness in the mouth, it remains there for a few more months. Once fermentation is complete, the stainless steel tank is transferred to a flextan egg where it finishes rounding. It is bottled without clarifying, with a minimum correction of sulphite. 2500 bottles
