La Bota de Vinagre de Jerez Reserva 127 “Botas Punta” is a unique and characterful vinegar, bottled in 2024 as the latest release in the prestigious series of extremely old vinegars from Equipo Navazos. With an approximate age of three decades, this vinegar originates from palomino fino wine that had already aged for nearly 15 years before beginning its transformation into vinegar, followed by another 15 years of maturation. Although its age more than qualifies it for the Gran Reserva label, it has been designated simply as Reserva to distinguish it from its older siblings, the renowned vinegars from editions 106 and 126.La Bota 127 “Botas Punta” was crafted from selected barrels of the oldest solera in the house. From each barrel, just over a hundred liters have been extracted, maintaining an acetic acid level above 10%, making it one of the most powerful vinegars on the market, surpassed only by its predecessor.
