Pandorga is what kites are called in Sanluqueño. This new wine by Ramiro Ibañez is made from Pedro Ximénez from La Panesa vineyard, in the Pago de Carrascal in Jerez. It is a vineyard of albariza, barajuela and tosca closed that allow the Pedro Ximénez grape to concentrate its sugars. Harvested with slight over-ripening, then undergoes 10 days of asoléo en pasera to reduce its weight by half and then ferment in boot. The aging, of one year, is done in the same American oak boots. It is a naturally sweet wine that tries to respect the characteristics of the vintage both in the vineyard and in the paseras and in winemaking.
