El origen de Selbach-Oster se remonta al año 1661 mediante la unión de las dos familias que le dan nombre al Weingut. La familia ha tenido intereses en la tonelería, la viticultura y el transporte fluvial, en lo que podría ser un ejemplo perfecto de integración vertical en la industria vitivinícola alemana. Hoy cuentan con 16 hectáreas de viñedos entre los que se cuentan algunos de los más prestigiosos viñedos de Zeltingen (Zeltingen Schlossberg, Zeltingen Sonnenuhr, Graacher Domprobst o Wehlener Sonnenuhr) que elaboran siguiendo los preceptos del pradikatt (Kabinett, Spatlese, Auslese). Viñedos que están compuestos de pizarras azules del periodo devónico, con pendientes de entre el 30 y el 60 por ciento de inclinación. Algunos de los mejores terroirs del mundo. La tradición y la solidez de la bodega durante más de tres siglos han inculcado en los Selbach una predilección por la calidad y por el trabajo duro como antecedente de esa calidad. Ese trabajo duro incluye las podas en verde en agosto, la vendimia manual habitual en el Mosela y la vinificación en los fudres de mil litros tradicionales en la zona. Si hubiera que destacar algo de los vinos de Selbach-Oster, seguramente se trataría de la limpieza y la transmisión del terroir que son capaces de realizar. No en vano se trata de una de las más grandes Weingut de Alemania.
