The Ratafia sur le Toit is a liquor crafted by Cédric Moussé in the region of Cuisles, Champagne, France. This ratafia, known as ""Le Rooftafia,"" is produced following a homemade recipe developed in 1947 by Edmond Moussé. It is made entirely from Meunier grapes, using superfine alcohol from the 2020 harvest and Meunier grape juice from the 2021 harvest.This ratafia is exclusively made from the historic Meunier plots, located in a terroir with fascinating geology, rich in green clays such as illite, and a mix of marls, limestones, and sands from the middle Eocene. The winery practices sustainable viticulture, using homemade compost and following principles of Chinese medicine to maintain the health of the vines, supported by a team of sheep, hens, and Kunekune pigs that assist in soil management.The harvest is carried out manually, carefully selecting the grapes for a gentle pressing. The ends of the pressings are used to make the ratafia, which ages for 2 years in demijohns on the roof of the winery, giving it a unique and distinctive character.The Ratafia sur le Toit is ideal to pair with a wonderful cheese board, and for cigar lovers, a good Havana would be the perfect companion for this Champenois Ratafia.
