Description

Pandorga is what kites are called in Sanluqueño. This new Ramiro Ibañez wine is made from Pedro Ximénez from the La Panesa vineyard, in the Pago de Carrascal in Jerez. It is a closed vineyard of albariza, barajuela and tosca that allow the Pedro Ximénez grape to concentrate its sugars. Harvested slightly overripe, then subjected to 10 days of sunbathing in a walk until its weight is reduced by half and then fermented in the boot. The one-year aging is carried out in the same American oak casks. It is a naturally sweet wine that tries to respect the characteristics of the vintage both in the vineyard and on the walks as well as in the vinification process.
