La Ratafia ‘La Recette d’Edmond’ is a craft liqueur made by the Moussé family in the Champagne region, France. This ratafia, created in 1947 by Edmond Moussé, is produced with superfine alcohol and Meunier grape juice, using traditional methods that reflect the rich history and unique terroir of the area.The terroir of Cuisles, where the Meunier grapes for this ratafia are grown, is notable for its rich and varied geology, with soils composed of green clay (illite) and clayey sands. This terrain, dating from between 55.8 and 33.9 million years ago, provides an ideal environment for viticulture. The Moussé family maintains their vineyards with homemade compost and follows principles of Chinese medicine to monitor the health of the vines, with the help of sheep, chickens, and Kunekune pigs to manage the soil.The harvest is done by hand and the grapes are gently pressed. The superfine Meunier alcohol is distilled in Cuisles’ communal still, while Meunier grape musts are collected at the following harvest. The ratafia ages for 24 months in oxidizing barrels, developing a distinctive and complex character.This ratafia presents itself as a perfect companion for desserts flavored with cocoa or lightly sweetened. Its balanced profile and aromatic richness make it an ideal choice to enjoy after a meal.With an alcohol content of 17.88%, this ratafia contains 147.80 g/L of glucose/fructose and 1.9 g/L of total acidity, offering a unique and refined taste experience.
