From a selection of the best Frappato grapes harvested each year, COS carries out an amphora vinification after which the wine is made following the classic Champagne method: second fermentation in the bottle. This 2012 had a second very slow fermentation in the bottle, 96 months, during which the bubble was acquiring a great creaminess. Very limited, only in magnum, a sparkling wine in which the dosage at the time of disgorgement is made with must from the vintage just harvested at that time. Without added sugars, pure Extra Brut, pure Frappato.
