A coupage with eighty percent Pinot and twenty percent Chardonnay that is even more winey and complex than Carte d'Or. It goes on the market six years after the harvest and is complex, exuberant and with great aging potential. Hervé Savès is the fourth generation of a Savés saga that has been vinifying in Bouzy since 1894. Today a total of 11 hectares of vineyards are in the hands of this small Recoltant-Manipulant, mainly in Bouzy but also in Ambonnay, Tours-sur-Marne (both Grand Cru as Bouzy) and Tauxieres. The vineyards are planted exclusively with Pinot Noir and Chardonnay, not including the Pinot Meunier. Winemaking relies on a vineyard with a perfect south orientation in the Grand Crus, which results in a perfect maturation of the grape, which allows Hervé to avoid malolactic to retain the purity of Pinot Noir. Herve keeps the wines in addition, a minimum of four years in stainless steel tanks (barrels are not used), which allows wines to be complex and mature when they are released. All of them have an exceptional balance with a very vinous and sensual character that moves them away from the sparkling profile and brings them closer to the style of the great wines.
