Description
Elaborated one hundred percent with Pinot Meunier of the oldest plot of the Domaine, called "Les Bouts de la Ville". It is a estate with a mother rock of pure chalk intermingled with clays, on which there is a layer of clays that retain moisture, one of sands that perfectly drain excesses and a thin top layer of vegetable compost. Manual harvest, maceration 5 days before bleeding and alcoholic fermentation in the barrel. The base wine does not make malolactic, it is not filtered or clarified. After 36 months of second fermentation in the bottle, it receives a minimum dosage of 2 grams per liter. One of the most special wines of Champagne. One of the best wines of Cédric.
