Description

100% Chardonnay from Cuis 1º Cru. This is the house's classic non-vintage blend that with constant taste represents the Gimonnet style: liveliness, lightness, finesse and purity of the great Chardonnays from the Cote-des-Blancs. It is the archetype of the Gimonnet style, nervous, airy wines, with little expedition liquor (8 gr./l when the normal in Champagne for a Brut without a vintage is 10-12 gr./l.) and technically perfect. Very short aging on lees (20 months) to maintain its characteristic freshness. Now in magnum, and Champagne always tastes better in magnum. The Gimonnet Cuis NV in magnum are always made with reserve wines older than in the bottle of 0.75.
