Hervé Savès is the fourth generation of a saga of Savès who have been making wine in Bouzy since 1894. Today, a total of 11 hectares of vineyards are in the hands of this little Recoltant-Manipulant, mainly in Bouzy but also in Ambonnay, Tours-sur-Marne (both Grand Cru as Bouzy) and Tauxiéres. The vineyards are planted exclusively with Pinot Noir and Chardonnay, not including Pinot Meunier. The vinification is based on a vineyard with a perfect orientation to the South in the Grand Crus, which give rise to a perfect maturation of the grapes, which allows Hervé to avoid malolactic diseases to retain the purity of the Pinot Noir.
