COLET-NAVAZOS RESERVA Extra Brut está elaborado según el método tradicional (champenoise) de la segunda fermentación en botella, a partir de vinos bases seleccionados de las propias fincas de Colet. La presencia sureña interviene en la segunda fermentación y, sobre todo, en el licor de expedición tras el degÃ¼elle. Ha tenido una muy prolongada crianza en rima, de 41 meses. Es absolutamente seco, con prácticamente cero de azúcar residual. El vino base está dominado por el Chardonnay y el aporte sureño le confiere un sutil pero personalísimo aire de levaduras de flor.
