Colet Navazos Brut Nature 2021

Colet Navazos Extra Brut has had a prolonged aging in rhyme, of 30 months. Made according to the traditional method of second fermentation in the bottle, from specially selected base wines from Colet's own estates. The southern presence intervenes in the second fermentation and, above all, in the expedition liquor after the disgorgement that, for this vintage, is made with Palo Cortado and Amontillado. It is absolutely dry, with practically zero residual sugar. The base wine is dominated by Xarel.lo and the southern contribution gives it a characteristic oxidative aging air.
