Lassalle Preference Extra Brut is a sparkling wine made with the Pinot Meunier (60%), Chardonnay (20%) and Pinot Noir (20%) varieties from different plots in the towns of Chigny les Roses, Rilly la Montagne, Villers Allerand and Ludes, in the Champagne region. 40% reserve wines are used with a dosage of 8 grams per liter. The Jules Lassalle Champagne winery was born in 1942 in the heart of the Montagne de Reims, more specifically in the town of Chigny-les-Roses. When Jules dies, in 1982, it is his wife Olga and his daughter Chantal who are in charge of giving continuity to his project, who is joined in 2006 by his granddaughter Angeline. Jules had had a certain intuition to dedicate a cuvée to her, which over the years has become the emblem of the house, when she was born: today Angeline follows her grandfather with the same philosophy of excellence. Its 16-hectare vineyard is located exclusively in Premier and Grand Cru villages and is made up of more than half Pinot Meunier. The work of three generations has allowed a unique understanding of their terroir, accompanied by great respect for their environment. In the winery, the vinifications are subtle and the aging times are long, for a delicate and deep result at the same time.
