This cuvée is an evolution of the traditional Carte Or from the family winery. Cédric wanted to pay homage to his great-great-grandfather Eugene by renaming her in his name. It is made mainly with Pinot Meunier and a smaller percentage of Pinot Noir planted in Cuisles, Jonquery and Châtillon-sur-Marne, vineyards with calcareous marna bedrock mainly.
To mark the importance of time, this wine is made with a perpetual reserve of wines that began in 2003 so that each year this solera is refreshed with 50% of the new harvest. The wine performs malolactic, is filtered very lightly and is not clarified. After the second fermentation in the bottle, the wine has a dosage of 2.5 grams per litre.
